I am a neophyte at cooking — how much water are we talking about for the stew and can momkfish be satisafactorily substituted wit Dorada (Mahi Mahi)???

Here’s another fish stew recipe from Diabetic Gourmet Magazine called Venetian Fish Stew. It calls for halibut, but you can make it with monkfish too:
